At China Shadow, the signature Chinese restaurant on the 26th floor of The Strings by InterContinental Tokyo, the spring edition of the Gastronomic Theater series-crafted by Chef Hidekazu Ando-will debut on Mar 5.
Classic Chinese cuisine is enhanced with premium ingredients from Kyoto and Nara, creatively interpreted by Chef Ando using traditional vegetables and locally sourced produce shaped by the regions’ history and culture. Kyoto specialties such as Kujo green onions and Kyoto duck, along with Nara’s Yamato heirloom vegetables including himo tōgarashi peppers, are featured in a refined spring menu that highlights the exceptional quality of these regional ingredients.
