At China Shadow, the Chinese restaurant on the 26th floor of The Strings by InterContinental Tokyo in Shinagawa, a limited-time Ajisai Parfait & Savory set will be available May 7 to July 7, celebrating the full allure of seasonal early summer.

Topped with translucent butterfly pea jelly, hydrangea-inspired Taiwanese castella, and fresh melon with grape sorbet, the parfait highlights the natural sweetness of seasonal fruits.
Layers of almond jelly with mixed berry sauce and purple sweet potato cream cheese create a smooth balance of gentle sweetness and richness. Paired with three savoury dishes, including escabeche infused with Kamakura craft gin “Tsuyu,” the set offers a harmonious interplay of sweet and savoury flavours.
