At China Shadow, the signature Chinese restaurant on the 26th floor of The Strings by InterContinental Tokyo, the autumn edition of the Gastronomic Theater series-crafted by Chef Hidekazu Ando-will debut on September 3.
This seasonal menu celebrates the rich bounty of Japan's Shikoku and Chugoku regions, featuring premium ingredients sourced from across the area. Fresh seafood and vegetables of the season are elevated through Chef Ando's refined approach, where classic Chinese cuisine is infused with a modern essence to create a truly distinctive experience. From appetizers to dim sum, main dishes, and desserts, the course highlights regional treasures such as Kagawa Olive Beef, Tokushima Awa-odori chicken, and Shimane's Shinjiko clams-each presented with vibrant artistry and Chef Ando's signature creativity.
