This seasonal menu celebrates the vibrant bounty of Japan’s Hokushinetsu region, showcasing premium ingredients sourced from Nagano, Toyama, Ishikawa, and Niigata. Carefully selected treasures from both land and sea are elevated through Chef Ando’s refined approach, where classic Chinese cuisine meets contemporary sophistication.
