At China Shadow, the signature Chinese restaurant on the 26th floor of The Strings by InterContinental Tokyo, the winter edition of the Gastronomic Theater series-crafted by Chef Hidekazu Ando-will debut on December 26.

This seasonal menu celebrates the rich bounty of Japan's Kyushu and Okinawa regions, featuring premium ingredients sourced from across the area. Fresh seafood and vegetables of the season are elevated through Chef Ando's refined approach, where classic Chinese cuisine is infused with a modern essence to create a truly distinctive experience. Featuring Okinawa's rare fish Suji-ara, Tsushima conger eel, Kagoshima black beef, and Fukuoka's premium Amaou strawberries, this winter menu luxuriously showcases the finest ingredients that Kyushu and Okinawa have to offer.
