    • Saffron flavored sea urchin blanc manger with cauliflower mousse & parsley coulis
    • Steamed apple wrapped foie gras with cardamom flavored sauce & apple chutney, toasted brioche
    • Sautéed tile fish fillet with bouillabaisse emulsion & candied fennel
    • Roasted beef fillet with red wine glazed Kyoto carrot, black spices flavored sabayon
